Air Fryer Crispy Potato Skins


Ingredients:

  • 4 cooked russet potatoes
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ (8-ounce) block Cabot Extra Sharp White Cheddar Cheese, shredded
  • Sour cream (for topping)
  • Sliced green onions (for topping)
  • Chopped sundried tomatoes (for topping)



Instructions:

  1. Preheat Air Fryer:

    • Preheat your air fryer to 380°F (190°C).
  2. Prepare Potatoes:

    • Slice the cooked potatoes in half lengthwise.
    • Scoop out some of the potato flesh to create a crevice (save the scooped potatoes for another use).
  3. Season:

    • Brush the olive oil all over the potato skins.
    • Season with garlic powder, salt, and black pepper.
  4. Air Fry:

    • Place the potato skins in the air fryer basket.
    • Cook for 10-12 minutes, or until the skins are crisp.
  5. Add Cheese:

    • Sprinkle shredded cheese inside each potato skin.
    • Continue cooking for an additional 2 minutes, or until the cheese melts.
  6. Serve:

    • Remove the potato skins and top them with sour cream, sliced green onions, and chopped sundried tomatoes or any other desired toppings.
