Air Fryer Crispy Potato Skins
Ingredients:
- 4 cooked russet potatoes
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ (8-ounce) block Cabot Extra Sharp White Cheddar Cheese, shredded
- Sour cream (for topping)
- Sliced green onions (for topping)
- Chopped sundried tomatoes (for topping)
Instructions:

Preheat Air Fryer:
- Preheat your air fryer to 380°F (190°C).

Prepare Potatoes:
- Slice the cooked potatoes in half lengthwise.
- Scoop out some of the potato flesh to create a crevice (save the scooped potatoes for another use).

Season:
- Brush the olive oil all over the potato skins.
- Season with garlic powder, salt, and black pepper.

Air Fry:
- Place the potato skins in the air fryer basket.
- Cook for 10-12 minutes, or until the skins are crisp.

Add Cheese:
- Sprinkle shredded cheese inside each potato skin.
- Continue cooking for an additional 2 minutes, or until the cheese melts.

- Remove the potato skins and top them with sour cream, sliced green onions, and chopped sundried tomatoes or any other desired toppings.
