No-Bake Matcha and Lime Cheesecake

             Ingredients


                        For Crust

        • 60g Oreo cookies (crushed)
        • 30g butter (melted)


                        Cheesecake Filling

        • 250g cream cheese (softened)
        • 45g zero-calorie sugar substitute - Get Here
        • 20g hot milk
        • 5g Gelatin sheets (soaked in cold water for 5 minutes)
        • 200g light cream (whipped to yogurt-like consistency)
        • 3g Matcha powder
        • 1/2 lime (juice)



                           Decorative Cream

        • 70g cream
        • 7g zero-calorie sugar substitute
        • Lime peel (for garnish)


                Instructions

                       

                        Prepare the Oreo Crust

        • Pour the mixture into the bottom of a mold or springform pan.
        • Press it down firmly to create an even layer
        • Refrigerate it for 10 minutes to allow it to set while you prepare the filling.

    

                      Make the Cheesecake Filling:

        • Mix the Soften cream cheese with the zero-calorie sugar substitute until smooth.
        • Heat the milk and dissolve the softened gelatin sheets in it, stirring until fully melted.
        • Add this mixture to the cream cheese and sugar blend.
        • Whip the light cream until it reaches a yogurt-like consistency, and fold it into the cheese mixture, ensuring everything is well combined.

    

                Divide and Flavor the Cheesecake.

        • Split the cheese mixture into two equal portions
        • In one half, add the matcha powder and mix until the matcha is fully incorporated for a vibrant green color. 
        • In the other half, squeeze the juice of half a lime and stir it in, giving it a refreshing citrus flavor.


                        Layer the Cheesecake:

        • Pour the lime-flavored cheese mixture over the Oreo crust, spreading it evenly
        • Refrigerate for 10 minutes to allow the layer to firm up slightly.
        • After 10 minutes, pour the matcha-flavored cheese mixture over the lime layer and smooth the surface.
        • Refrigerate the cheesecake for at least 4 hours, or overnight, to ensure it sets completely.


                       Prepare the Decorative Cream:

        • Soak the whipped cream with lime peel overnight for extra flavor.
        • When ready to serve, whip the cream with the zero-calorie sugar substitute until soft peaks form, and the cream holds its shape with visible lines.
        • Using a spoon, casually press the whipped cream onto the top of the cheesecake and garnish with lime peel for a final touch of zest.
